Adventures in the Kitchen: Pork Tenderloin

This is a dish that my mom has perfected and it's one of my favorite things. It's a family recipe so everything's up to taste. But this is Pork Tenderloin with a yummy-type of sesame sauce.

1-2 lbs. Pork tenderloin, boneless and little fat
Red wine vinegar
Sesame seed oil
Dijon mustard
Brown sugar
Sesame seeds
Olive oil

Toast the sesame seeds and then put to the side. Mix together the sesame seed oil, red wine vinegar, dijon mustard and brown sugar. Do it to taste and you need at least 1 cup of the mixture.

Salt and pepper the pork tenderloin then sear in a hot pan with the olive oil. Place into an oven safe baking dish. Add the toasted sesame seeds to the sauce before pouring over the meat.

Cover the baking dish with aluminum foil and cut some vents. Place into the oven at 350 degrees for an hour. When you cut into it, the inside should be a light color.
